Football Party Dips

Football and food.  Food and football.  
Is there any more natural combination?
  
(Or if football isn't your thing, then there's basketball and food, hockey and food, soccer and food, baseball and food or any other sport and food!)  
There's just something perfect about watching well-trained athletes running around to work up an appetite.


Of course, when sports are on, you don't want anything too big and fancy.  Not only would it kill the mood, but when everyone jumped up to cheer, they'd end up spilling their food all over the floor.  (Bad deal that.)  So here are five dips that you can serve
at your next sports party.  They're all finger friendly and delicious and they might even stick to the plate when cheering erupts.

Simple Spin Dip

This recipe is a template for spinach dip.  Feel free to embellish however you like.


Ingredients

1 package frozen spinach

2 tablespoons olive oil

1 small onion, minced

4 cloves garlic, minced

2 tablespoons butter

2 tablespoons flour

1 cup heavy cream

1/4 cup Parmesan cheese

Splash hot sauce



Directions

Boil the spinach according to package directions. Squeeze all of the water from the spinach (there will be a lot of water in the spinach) and then set aside to cool.

Once the spinach is drained, pour the olive oil into a skillet and let it get hot over medium-high heat.  Add the onions and garlic and saute until the onions are translucent, about eight minutes.  Next, add the spinach and let it saute for about a minute, just to develop it's flavor a bit more.

Remove the spinach/onion mixture and make a roux.  To do that, melt the butter in the skillet.  When melted, add the flour and stir to make a paste.  Cook for sixty seconds or until it starts to smell nutty and then add the cream.

Stir to mix the roux and the cream and then add the spinach mix back into the skillet along with the Parmesan cheese and the hot sauce.  Stir until thick.


Dipper suggestions:
Tortilla chips, raw vegetables, pita

Easy Cheese Balls

Cheese balls feel so last century, but they're still really tasty.  Besides, these aren't your momma's cheese balls.


Ingredients

2 packages cream cheese

4 green onion greens, thinly sliced

1/4 cup shredded cheddar cheese

Splash Worcestershire sauce

2 tablespoons garlic powder

1/4 cup dried beef

(optional) 1 can American ale

(optional) 1 package Ranch dressing mix


Directions

Set the cream cheese aside so that it comes to room temperature.  Once soft, mix the rest of the ingredients until well incorporated.

Using your hands, form the mix into two balls, wrap in plastic wrap, and then put them in the refrigerator for at least fifteen minutes to set.  They will do better if they have at least an hour to rest before serving.


Dipper suggestion: Ritz crackers



Green Chili White Cheese Dip

Once you've made your own cheese dip, you'll never go back.


Ingredients

4 tablespoons butter

4 tablespoons flour

2 cups heavy cream

1 tablespoon garlic powder

2 teaspoons cayenne

1/4 cup green chilies

2 cups shredded Monterrey Jack cheese


Directions

In a pot or high-sided skillet, melt the butter over medium heat.  Add the flour and stir to make a paste.  Cook the paste until it smells nutty, about sixty seconds.

Add the cream, garlic powder, cayenne, and chilies to the pot and stir to mix.  Bring the cream to a simmer, stirring occasionally.

Once it's at a simmer, add the cheese and stir constantly to melt.  The sauce is ready when it is thick to your liking.


Dipper suggestions: Nachos!



Green Olive Dip

A simple dip made entirely from store bought components, this recipe showcases how good green olives can be.  However, be careful when making it.  Stir in the Ranch dip mix slowly so that you don't over-Ranch your dip.


Ingredients

1 16 oz container sour cream

10 green olives, roughly chopped

1 package Ranch dressing mix

(optional) Olive juice to taste


Directions

Mix the sour cream and olives.  Next, stir in half of the package of Ranch dressing mix and a splash or two of the optional olive juice.  Taste and slowly add in more Ranch dressing mix and/or olive juice as needed.  Once you are happy with the flavor, serve.


Dipper suggestions: corn chips, potato chips, raw vegetables.



Pork French Onion Dip

French onion dip has been around for years.  This recipe updates its flavor with the help of everyone's favorite ingredient: bacon!


Ingredients

1 package cream cheese

4 strips smoky bacon

8 ounces sour cream

2 packages French onion soup mix

4 ounces sliced pork or ham, finely chopped


Directions

Set the package of cream cheese on the counter so that it can come to room temperature.

In a skillet over medium high heat, slowly cook the bacon to let it release its fat.  Once you have a tablespoon of fat, you can stop cooking the bacon or continue and reserve the rest of the fat for a different recipe.

Mix the bacon fat, cream cheese, sour cream, French onion soup mix, and pork.  Stir well.  Chill and serve.


Dipping suggestions: Ritz crackers, toasted rye bread, corn chips, potato chips
